2. Slow Cooker Tex-Mex Chicken

For this delicious south of the border-inspired meal, you’ll need 4-5 boneless chicken breasts, 2 packs of taco seasoning, a small can of green chilies, and a 15 ounce can of each of the following:

– fire-roasted diced tomatoes, undrained
– Mexican or plain canned corn, drained
– black beans, rinsed and drained
– pinto beans, rinsed and drained
– red beans, rinsed and drained

Place all ingredients in your slow cooker and cook on low for 6-8 hours!

Place a 4-5 pound whole chicken (thawed) into your slow cooker on low heat for about 6 hours. At the end of 6 hours, carefully remove the chicken from your slow cooker and get ready to make gravy!

For the gravy, you’ll need about 1 1/2 cups of drippings. If you don’t have enough drippings, you can add water to compensate. Place in a saucepan over medium high heat. Whisk in 1/2 cup flour and stir until thick and bubbly. Season to taste!
